American author and TV personality Clifton Fadiman once said, “One measure of friendship consists not in the number of things friends can discuss, but in the number of things they need no longer mention.” Ironically, it seems like the very essence of modern day friendship revolves around this thought. With various social networking arenas on the Internet, the number of friends we make has most definitely increased. However, with the changing parameters of who we might call a friend, there is a need to examine the quality of friendship in a world governed by Facebook and Twitter.Virtual best friends

On the eve of Friendship Day, we find out if the nature of friendship we share with one another has been affected by the virtual world. Gone are the days when you could talk to your best friend about everything under the sun, be it your latest crush or your bad grades at school. With instant messaging and texting, there is very little chance of sharing every single detail about one’s life with a friend. Anita Amy, a commerce graduate says, “It’s been three years since I met my best friend. We live in the same city and not too far from each other. But with our busy schedules, the only way we keep in touch is on MSN and we SMS each other once in a while. We obviously don’t find the time to talk about everything that’s happening but I make sure I update her on the most significant things.”

Feast on salad

The Hindu : y>Add a tangy twist to the cool cucumber

This salad,is a lovely, light way to begin a Mexican meal. Serve it atop lettuce leaves as a salad, or serve over rice. Alternately, use it as a sauce with fish, chicken or fajitas.

This recipe serves six. Ingredients Long European cucumber, very finely diced: 1 Salt: to taste Small red onion, finely minced: 1 Medium-sized ripe tomatoes, finely chopped: 5 Jalapeño peppers, seeded if desired and finely chopped: 2 Chopped cilantro (to taste), plus several sprigs for garnish: half cup Balsamic vinegar: 1 tsp Fresh lime juice: 3 tbsp Extra virgin olive oil: 3 tbsp Lettuce: for serving Avocado, sliced, for garnish: 1

Method

Place the finely diced cucumber in a colander, and sprinkle with salt. Toss and keep aside for 15 minutes. Rinse the cucumber thoroughly with cold water, and drain again on paper towels.

Meanwhile, place the onion in a bowl and cover with cold water. Keep aside for five minutes, then drain, rinse with cold water and drain on paper towels.

Combine the tomatoes, chillies, cilantro, vinegar, lime juice and olive oil in a bowl.

Add the cucumber and onion, and season to taste with salt. Taste and adjust seasoning.

Serve the salad on lettuce leaves, garnished with slices of avocado and cilantro sprigs, or spoon over steamed rice.

Fresh mango puree: 250 gm

Castor sugar: 80 gm

Gelatine: 5 gm

Whipped cream: 225 gmFor tender coconut mousse

Milk: 100 gm

Tender coconut: 2

Whipped cream: 200 gm

Gelatine: 4 gm

Mango Parfait

Boil mango puree and sugar. Cool and add the gelatine. Finally, gently fold in the whipped cream.Tender coconut Parfait

Soften the gelatine in the cold water then melt in the microwave oven. Mix the tender coconut puree with the sugar, then mix the gelatine and whipped cream.
